200g Asparagus
2 cloves Garlic
200ml Creme fraiche or cream
50g Parmesan
250g Pasta of your choice
1/2 Lemon

Asparagus pasta

    A tasty seasonal recipe for using asparagus in early summer. Really quick and easy. Can be made with cream instead of creme fraiche, but this version is a bit healthier.

    Quantities for this recipe should feed 2 adults and 2 small children.

    Start cooking the pasta in a large pan of boiling water.

    Whilst the pasta is cooking, prepare the sauce. Snap off the woody part of the asparagus stalks. Trim off the asparagus tips from the remaining stalks. Add the stalks and tips to the boiling pasta and cook for 5-10 minutes until tender. Remove the asparagus from the pasta pan with a slotted spoon and reserve for the next step.

    Meanwhile, place the whole garlic cloves in a pan with the cream or creme fraiche. Heat on a low heat but don't allow to boil.

    Tip the warmed garlic and creme fraiche into a mini chopper with 50g grated parmesan and the blanched asparagus stalks. Blend until smooth.

    Once the pasta is cooked, drain and mix with the asparagus tips, blended sauce and a twist of lemon juice. Serve with cracked black pepper and more grated parmesan.

    Cooked this the other week and was super impressed with just how tasty it was. Bags of flavour and super quick to make. It’ll definitely be gracing the dinner table again.
