2, thinly sliced Spring onions
2tsp Pesto
30g, grated Cheddar
1kg Sweet potatoes
4 Burger buns or rolls
To top buns Salad veg

Tasty but healthy! I make a variety of burger sizes depending on the age (and appetite) of the diners.

Peel and cut the sweet potatoes into chips or wedges. Lay on a baking sheet and drizzle with oil. Place in a preheated oven at 200degC for 35-40 minutes

Whilst the potatoes cook, mix the turkey mince with the pesto, spring onion and cheese. The quickest way to mix this is to get in there with your hands. Form into patties (around 200g in weight for adults, smaller for kids depending upon age). Flatten the patties to around 1inch thickness. Fry or grill, turning half way. This will take about 10-15minutes depending upon the size and thickness of the patties.

Serve alongside potato wedges in a toasted burger bun with your choice of salad.
