Cheesy broccoli pasta

Ingredients

300g Pasta
30g Parmesan cheese, grated
30g Fontina cheese, grated
30g Comte cheese, grated
sprig of each, finely chopped Marjoram & thyme
125ml 1/2 fat creme fraiche
1 Egg yolk
200g Tenderstem brocolli

    Cook the pasta in a large pan of boiling water.

    Place a heat proof bowl on top of the pasta pan and place in it the creme fraiche, cheese and herbs. Stir well and allow the cheese to melt. Remove from the heat and stir in the egg yolk.

    Around 5 minutes before the pasta is cooked, add the tenderstem broccoli (chopped) to the boiling pasta pan and allow to soften.

    When the pasta is cooked, drain, and return to the pan along with the broccoli and the prepared pasta sauce. Serve in bowls with plenty of cracked black pepper.
