Ingredients

450g New potatoes
450g Butternut squash
Bulb of garlic
2 small Red onions
700g Chicken thighs or drumsticks
100g Chorizo
1 Red chilli, optional

    Another easy tray bake that you can put together the night before, refrigerate and then pop in the oven for about an hour when ready to eat it. In fact you can entertain the kids, or put your feet up (chance’d be a fine thing!) whilst it cooks!

    Although my kids don’t like all the components of this dish, they each find bits they love! My daughter will just eat the butternut and potatoes whilst my son tends to eat the meat! Either way, it means there’s no complaining!

    Cut up the butternut squash into 2 inch square(ish) chunks and place in an oven proof dish. I don't bother to peel the butternut, it's not necessary! Add the potatoes, whole garlic cloves, chilli (optional), red onion (cut into wedges) and sliced chorizo. Place the chicken pieces on the top. No need to add oil or seasoning, the chorizo sees to this!

    Either cover and place in the fridge until ready to cook. Or proceed straight to cooking in an oven at 200degC. If cooking straight away, this will take about 45 minutes but if cooking straight from chilled, allow an hour to cook fully until the chicken is browned and fully cooked through. Serve with salad or broccoli (or other veg of your choice).
