500g New potatoes Jersey royals are delicious!
250g Cherry tomatoes
100g Pitted black olives
250g Asparagus, woody ends broken off
3-4 Cod fillets
3-4 tbsp Pesto
Drizzle Olive oil
1/2, sliced Lemon
Handful, torn Basil

Cod with Italian Vegetables.

    A really quick and easy tray bake. My kids love fish and pesto so this works well for them but I know not all kids like fish! The good thing about tray bakes is that you can essentially just choose which veg you have in the fridge to use up or just choose veg that you know your kids will like. If you do a variety then hopefully everyone will find something they like!

    I use cod for this recipe but any white fish will be good. If you use something like seabass, you will need to reduce the cooking time for the fish significantly.

    Entirely gluten free if you choose a suitable brand of pesto.

    Parboil the new potatoes for 10 minutes. Drain.


    Whilst the potatoes are cooking, spread a tablespoon of pesto over the top of each of the cod fillets.


    In an oven-proof dish, arrange the tomatoes, cooked potatoes, olives, lemon slices, torn basil and asparagus spears. Place the cod on top, drizzle over 1 tbsp olive oil and bake at 180degC for 20 minutes until the fish is cooked.
