Ingredients

300g Pasta
200g Curly kale, presliced
1 Red chilli
4 Anchovy fillets
1 Lemon
to garnish, optional Parmesan cheese
2 tbsp Olive oil
1 Clove of garlic

Kale & anchovy pasta

Directions

A really quick and easy pasta dish. You can substitute the kale for broccoli or peas if this isn’t a popular vegetable in your house. I would cook the peas or broccoli separately and toss them in the chilli/anchovy oil prior to mixing through the pasta.

Cook the pasta in a large pan of boiling water.

Whilst the pasta is cooking, finely chop the garlic, chilli and anchovy fillets. In a large pan, heat the olive oil and add the garlic, chilli and anchovies. Fry for a few minutes being careful not to let the garlic brown. Add the kale to the pan, mix and place on the pan lid to allow the kale to wilt.

When the pasta is cooked and drained, mix the kale mixture through the pasta with a generous squeeze of lemon juice. Garnish with grated parmesan.
