Ingredients

500g Lean steak mince
1, crusts removed and grated Slice brown bread
Handful, torn Basil
15g, grated Parmesan
1 Egg
300g Pasta
4 (green half only, chopped) Spring onions
Tomato sauce:
2 tins Tinned chopped tomatoes
handful, torn Basil
1, diced Carrot
4 (white half only, chopped) Spring onions
1, finely chopped Clove of garlic
2 tbsp Balsamic vinegar
1 tsp Sugar

Directions

This is a great recipe for hiding veggies! And even better to make in batch and freeze in portions. Makes a really easy mid-week meal if you reheat a portion and cook some pasta.

Prepare the meatballs

Preheat the oven to 180degC.

In a large bowl, mix the mince with the egg, parmesan, basil, bread and spring onion. Form into balls (ping pong ball-sized) and place onto a baking tray. Bake the meatballs in the oven for 20 minutes.

Make the tomato sauce

Meanwhile, in a pan, add the tinned tomatoes, garlic, spring onions, carrot, balsamic vinegar, sugar and basil. Cook over a medium heat for 20 minutes until the carrots are tender.

Cook the pasta.

Blend and pass the tomato sauce through a sieve. Place back into the saucepan and add the cooked meatballs.

Serve the meatballs and sauce with salad and the freshly cooked pasta and a grating of parmesan.
