2 and a half tbsp Cumin seeds
2 tbsp Coriander seeds
1 Cinamon stick
2 tsp Ground ginger
2 tsp Peppercorns
1 tsp Tumeric
10 Cardamom pods, seeds only

    A great tip is to have a whole bunch of spice mixes and spice pastes made up in advance to help give extra flavour to dishes. This is a great recipe for a Moroccan spice mix that can be used in a variety of Arabic dishes. I use it in my Koshari recipe which you’ll find on the website. It doesn’t contain chilli so should be suitable for most little taste buds!

    Dry fry all the whole spices in a pan for a few minutes.

    Place all spices in a spice grinder or pestle and mortar and grind until powdered
