Ingredients

250g, diced Roast chicken
4 rashers, chopped Streaky bacon
1, sliced Leek
50g Sweetcorn
Any left over vegetables from roast dinner
350ml Left over gravy
120g Plain flour
60g Butter or margarine
50g Cornflakes, crushed

Directions

A great way to use up leftovers from a roast chicken dinner.

Make in advance and stick in the over for 30 minutes before serving with potatoes and veg.

Fry the leeks and bacon in a pan until soft.

Add the chicken, gravy and vegetables. Transfer to an overproof dish.

Make the crumble topping by placing the flour and butter in a mini-chopper or food processor. Blitz until it resembles fine breadcrumbs. Mix with crushed cornflakes. SPrinkle this crumble mixture on top of the chicken filling.

Bake in a pre-heated oven at 180degC for 30 minutes.
