Ingredients

1.5kg Fresh tomatoes Try to get the tasty ripe ones
1 Bulb of garlic, seperate X in cloves
Few sprigs Thyme
2tbsp Olive oil
To taste Salt and pepper
2tbsp Balsamic vinegar

Roasted tomato and garlic sauce

    This is a great, versatile sauce which is delicious and a great winner with my kids. I use it to stir through pasta but it can also be used to flavour a risotto which is delicious in combination with mozzerella. It can also be used as a tomato topping when making home-made pizza.

    A major winner on all counts.

    The quantities in this recipe should make around 500ml of sauce.

    Pre-heat the oven to 160degC. Half the tomatoes and place on a baking sheet along with the garlic, thyme, olive oil, balsamic vinegar and seasoning.

    Roast in the oven for 45 minutes.

    Remove the tomatoes (and juices) from the oven and spoon into a mini chopper or blender. Make sure you remove the skins from the roasted garlic cloves before blending into a smooth sauce.

    Push the sauce through a sieve with a metal spoon to make a smooth sauce. Freeze in batches or use on pasta, pizza or risotto.
