375g Chicken breast, sliced or chicken breast mini fillets
135g Mini sweetcorn
1/2 435g tin, juice reserved Tinned pineapple chunks in juice
1 Red pepper, cut into 8ths
1 Onion, cut into 8ths
225g tin Water chestnuts
thumb sized piece, grated Ginger
1tbsp Soy sauce
1 tbsp White wine vinegar
1 tbsp Tomato puree
1dsp Cornflour
for garnish, optional chilli flakes

Slow cooker sweet & sour chicken

    Easy, tasty and healthy! This is my version of sweet and sour chicken. Many have lots of a added sugar but this just uses pineapple juice to sweeten it.

    You could choose alternative veggies to go in but these are the ones that I felt would be a good selection for my little ones.

    Prepare the sweet and sour chicken by placing all the ingredients in the slow cooker bowl including the juice from the tinned pineapple (excluding the cornflour and the sweetcorn). Mix and place on a low heat for 6-8 hours.


    30 minutes prior to serving, turn the slow cooker heat up to high and add the sweetcorn along with the cornflour, mixed with a little water. Continue to cook for 30 minutes. After this time, the sauce should be thickened. Serve wit rice.
