Ingredients

300g Self raising flour
300g Soft light brown sugar
1tsp Ground cinamon
1/2 tsp Ground cloves
1 tsp Ground ginger
1 tsp Bicarbonate of soda
175g Sultanas
chopped finely 2-3 whole stem ginger
200g, melted Unsalted butter
Zest and juice of 1 satsuma
400g, grated Pumpkin flesh
4, beaten Eggs
Frosting:
100g Creme fraiche
100g Icing sugar

    Directions

    A delicious (and easy) cake to make. I managed to whip this up (albeit forgetting to line the baking tray) whilst making the roast chicken and pumpkin dish on this site. I was on a mission not to waste pumpkin!

    And cake never goes down badly. Let’s face it. This one just has more ethical considerations and vitamins!

    Preheat the oven to 180degC. Grease and line a 25x25cm square cake tin.

    In a large bowl, combine the dry ingredients (flour, bicarbonate of soda, sugar, spices and sultanas.

    Melt the butter. Remove from the heat and add the juice and zest of the satsuma. Allow to cool slightly and combine with the eggs.

    Add the wet ingredients to the dry ingredients and mix well. Finally, add the chopped stem ginger and grated pumpkin. Mix well and transfer the cake batter to the cake pan. Bake in the oven for 30-40 minutes. You can test the cake to see if it is cooked by inserting a skewer into the middle of the cake. If it comes out clean, then the batter is cooked all the way through.

    Remove the cake from the oven and allow to cool on a wire rack.

    Make the icing by mixing 100g creme fraiche with 100g sieved icing sugar. Allow to set slightly and pour over the top of the cake. Cut into bite sized portions.
