5 cloves, unpeeled Garlic
2, unpeeled Shallots
30g bunch Fresh coriander
1 Green chilli
50g (peeled) Fresh ginger
3 sticks Lemongrass
1, juice and zest Lime
3 Anchovy fillets
1 tsp Coriander seeds
1 tsp Ground cumin

Thai Green Curry Paste

This is a great thing to prepare in a batch and to freeze in advance in an ice cube tray. When you’re ready to make a recipe with the paste, just pop a few cubes out of the tray and cook with the paste from frozen.

The recipe for this paste makes around 16 ice cubes worth of curry paste which would be enough to make 16 portions of curry. It can be used in my thai green curry recipe, or to make into a Thai-style soup which is great with butternut squash or sweet potato.

My recipe is for a very mild curry paste which is suitable for kids but obviously if you want to make it a bit spicier, just add another chilli (or two!).

Place all ingredients in a mini chopper or food processor.


Blend with 30ml water to make a smooth paste.


Spoon paste into pre-greased ice cube trays. Cover with cling film and freeze until required.
